PLEASE NOTE : We are sold out of half cows through June 2024. Please sign up for the waitlist to be notified when we open up our deposits for half and whole animals for the second half of this year! We expect to list these harvest opportunities by the end of April. Thank you!

Our half cow price is: $5.25/lbs. hanging weight (for all deposits taken after 9/5/23) vacuum sealed in plastic. This is inclusive of all processing costs, aging, freezing fresh and packaging. Our average hanging weights for a half cow typically come in around 375lb (this is the weight of the animal after harvest and after the head, hide, organs, legs and tail have been removed) In this scenario a half with a 375lb hanging weight would cost $1968.75 with estimated take home yield of approximately **200 lbs. – 225 lbs. – please note the hanging weight can fluctuate up to 10-12% in either direction.

All of our steers are butchered at two family owned USDA inspected processing facilities. Midsouth Packers is located in Forsyth, Ga. and Blalock Meats is located in Rabun Gap, Ga. Halves and wholes can be picked up directly from our processor or for those processed at Midsouth – we can transport via freezer truck to our farm in Clarkesville for a $100 transport fee.

*Customers pick up their beef directly at the processor. If Midsouth Packers is too far of a drive for pick up, customers can choose to pay a $100 transport fee to have beef freighted to teXga for pick up. The pick up option can be determined closer to harvest date and will be applied to the remaining balance invoice. Beef will be available for pick up approximately three weeks after harvest date.

**In reference to take home weights: if you choose bone in ribeyes, Porterhouses, bone in chuck roast and bone in shoulder roast your take home weight will climb higher although you’ll still be getting the same amount of beef (just more bone). Another benefit to ordering a whole/half is that you also get soup bones to make your own beef stock as well as some of the more creative cuts such as liver, heart, tongue and oxtail. These cuts are collectively referred to as the offal and with some creativity and proper preparation they can make a good meal!

The easiest way to look at the value proposition of buying a half/whole is that you’ll end up saving approximately 25% versus buying that same quantity of beef from us in our small bundles throughout the year.

When you place your deposit for a half, we will then reserve an animal for you + harvest date. We’ll also help you determine what cuts are best for your family and we’ll complete your processing ‘cut sheet’ together.

How much freezer space do I need for a half cow? We recommend a small chest-type freezer. 7-8 cubic foot model;  30 lbs. of beef = 1 cubic foot of freezer space
