Whole Beef – Full Details
We are currently accepting deposits for July–December 2026 harvest dates.
Our whole beef is priced at $6.50/lb. hanging weight, which includes processing, dry aging, vacuum sealing, and freezing.
A typical whole averages ~750 lbs. hanging weight, which yields approximately 420–460 lbs. of take-home beef, depending on how you choose to have your animal cut.
Processing & Pickup
For 2026, we are working with three trusted, family-owned USDA-inspected facilities:
- Midsouth Packers – Forsyth, GA
- North Georgia Meats – Ellijay, GA
- Blue Ridge Meats – Rabun Gap, GA
Customers may pick up their beef directly from the processor.
For beef processed at Midsouth Packers or North Georgia Meats, we offer transport to our farm in Clarkesville for a $100 delivery fee, which will be added to your final invoice. Final pickup details can be confirmed closer to your harvest date.
Beef is typically ready for pickup approximately 3 weeks after harvest.
Customize Your Beef
When you reserve a whole, we’ll guide you through completing your cut sheet so your beef is packaged exactly how your family prefers.
With a whole animal, you also have the option to submit up to two cut sheets, which is especially helpful if you’re splitting with another household.
Your cutting preferences will impact your final take-home weight. For example, selecting more bone-in cuts (ribeyes, porterhouses, roasts) will increase total weight, while boneless cuts reduce it—though you’re receiving the same amount of beef either way.
You may also choose to include:
- Soup bones (great for stock)
- Organ meats (liver, heart, tongue)
- Oxtail and other specialty cuts
Why Buy in Bulk?
Purchasing a whole (or half) beef typically saves around 25% compared to buying the same quantity through our retail bundles throughout the year.
How It Works
Once you place your deposit, we reserve an animal and harvest date for you. From there, we’ll walk with you through the entire process—from selecting cuts to final pickup.
Freezer Space
Plan for approximately 1 cubic foot of freezer space per 30 lbs. of beef.
A whole beef typically requires about a 14 cubic foot chest freezer.
