  • 2 lbs. teXga ground beef
  • 3-4 cups kale or spinach
  • 1 Vidalia onion
  • 1 zucchini
  • 1 yellow squash
  • 1 bell pepper
  • Cherry tomatoes (quartered)
  • Taco seasoning to taste
  • 1-2 TBS Minced garlic
  • Cheddar cheese
  • 2 TBS olive oil

Please note: The idea behind this recipe is to mix ground beef with whatever veggies you have available in your fridge. The veggies listed in the ingredients list are just ideas you can use, but please feel free to experiment!

Step 1
Brown your ground beef and set aside
Step 2
Chop your veggies and cook down in olive oil and minced garlic. *Add your kale after all other veggies have been cooked down.
Step 3
Add your ground beef back in in addition to taco seasoning. Top with cheese and enjoy.
