Beef-N-Mac-Soup

One of our 2023 Meat Monday recipe features - teXga beef and macaroni soup (similar to lasagna soup!)

INGREDIENTS:
• 2 lbs teXga ground beef
• 1 sweet onion, diced
• 1 TBS minced garlic
• Italian seasoning or make your own — salt, pepper, oregano, parsley and fresh basil (Sorry, I didn’t measure!)
• 1 jar of your favorite spaghetti / marinara sauce (I think mine was 28 oz.)
• 4 cups chicken broth
• 4-6 oz. of cream cheese
• 1, 28 oz. can of diced tomatoes (I used Italian style!)
• 1 cup of Parmesan cheese
• 2 cups of elbow noodles — not cooked
• Optional but I added about 1/2 cup of heavy cream because I had it!

DIRECTIONS:
- Brown your beef and cook with onions, garlic and seasonings. Drain.
- Add beef back to your soup pot and stir in the rest of your ingredients. Bring to a slow boil then turn to simmer for 30 minutes (make sure your noodles cook!). Top with fresh basil and enjoy!
