- • 3-4 cups kale or spinach
- • 1 Vidalia onion
- • 1 zucchini
- • 1 yellow squash
- • 1 bell pepper
- • Cherry tomatoes (quartered)
- • Taco seasoning to taste
- • 1-2 TBS Minced garlic
- • Cheddar cheese
- • 2 TBS olive oil

Brown your ground beef and set aside
Chop your veggies and cook down in olive oil and minced garlic. *Add your kale after all other veggies have been cooked down.
Add your ground beef back in in addition to taco seasoning. Top with cheese and enjoy.
